Cynthia Nirel Chico is a raw gourmet chef and graduate from Living Light Culinary Institute. She has been a raw food enthusiast since 1999, after years of searching for improved health and vitality. She discovered that she could eat her favorite foods if prepared vegan raw that doctors told her she could not eat due to her health condition. Two of these preferred foods are chocolate and chiles.
Chef Nirel recalls her childhood years most spent in her mother’s kitchen where her love for preparing food flourished. “For me there was no other person, other than my grandfather who owned one of the first Mexican Restaurants on the southeast side of Chicago, who was as great a cook as my mom.”
In 2009 she began Unforgettable Chocolate to share her love for chocolate vegan raw treats that are organic, healthy, and delicious. Today her vision has expanded to include other delicious foods including granolas of a variety of flavors. Her products are foods that are prepared in its natural, or “raw” form. The three main raw food groups are fresh fruits, vegetables and natural fats, such as avocados, nuts, and seeds.
Chef Nirel understands the many nutritional benefits associated with eating more of these foods. She knows first hand what delicious healthy food does to the mind, body, and spirit. For this reason it is essential that the ingredients in her products come from local farmers who are certified organic or apply organic farming methods. “I want my food to be transforming and follow the wisdom of “let your food be your medicine and your medicine be your food.” It is within this context that her food live up to her company’s motto “a taste of the divine”.
